With that, you’ll also notice that many of our recipes are dessert-heavy, but this doesn’t mean we don’t love a savoury classic either. This is why today, we present to you one of our favourite healthy recipes, which you can enjoy both hot and cold. Keep reading to discover how we make our spicy ginger and carrot soup. 

 

Why is ginger so good for you? 

Ginger is one of those foods we all have to admit we don’t eat enough of.  Unless you’re making curry every night or drinking ginger tea, it’s not always an easy ingredient to incorporate due to its strong flavour.  But it’s one that you should consider cooking with more and more to reap the antioxidising and anti-inflammatory benefits it presents.  

Ginger is also fantastic for gut health as it can ease constipation, improve digestion, clear toxins from the gut and help ease nausea.  This makes it a fantastic ingredient for those who wake up feeling dizzy and lightheaded, those experiencing morning sickness or even those who are not feeling right in the stomach on a random day.  Due to its incredible benefits, it’s also known to support those with chronic illnesses such as vertigo. 

 

Why is carrot so good for you?

Eat your carrots, and you’ll have better eyesight.  We bet you’ve heard that one at least once in your life before. While it can’t repair eyesight, it’s 100% true that carrots are good for the eyes, helping to boost your vitamin A levels, which are essential for protecting the cells around your eyes to reduce the rate at which your eye health deteriorates. 

Carrots are also high in fibre, boosting digestion on days when you’re finding it hard to go to the toilet. Beyond this, they can lower your blood pressure, improving your body’s heart, brain and overall organ health. What a superfood. 

 

Onto the recipe: how to make spicy carrot and ginger soup 

What you’ll need 

  • 3 tablespoons of dairy-free butter or vegan alternative 
  • 6 large carrots 
  • 1 cup of onion, diced 
  • 1-2 teaspoons of Jomeis fine does spicy ginger latte mix (depending on how spicy you like it) 
  • 2 cups of low-salt vegetable stock
  • 2 cups of water
  • Lemon or orange zest for a tangy hit 
  • Chives, parsley and sour cream to serve (optional) 

To make it: 

  • Saute your onions and carrots in a frying pan with the butter until soft and slightly browned. 
  • Add stock, water, Jomeis Fine Foods spicy ginger powder and zest and bring to a boil. 
  • Reduce heat to a simmer and cook for 30 minutes or until the vegetables are soft and the flavour is fragrant. 
  • Season with salt and pepper as desired. 
  • Add the soup to a blender or use a puree to thicken it, making sure no clumps remain. If the soup is too hot, you may risk your blender popping. So, allow it to cool slightly before taking this step. 
  • Top with chives, parsley and sour cream if desired, and enjoy.
