Christmas is nearly here, and if there's one thing we know for certain, it's that rocky road is a simple delight that makes a great treat for the festivities. While we love a classic rocky road, it can be VERY sugar and dairy-heavy, which, as you know, we don't always love to do here at Jomeis Fine Foods. That's why this year, we're giving you a sweet and delicious rocky road with a minty, dairy-free and gluten-free twist. 

We promise you that it's still delicious, even without half as many of those nasty preservatives and sugars. Try it for yourself by following our recipe below.

Drinking our minty cacao latte before bed is not only delectable but can relax the mind as much as it can alert it, meaning you'll be lulled into sleep better than ever before. Whether you've been asking 'how can you sleep better' or 'how can you get rid of stomach aches', a little mint goes a long, long way. 

Onto the recipe for this gluten-free minty rocky road 

What you'll need

  • 400 grams of vegan or plant-based milk chocolate
  • 100 grams of honey
  • 120 grams of dairy-free butter
  • 150 grams of arrowroot biscuits 
  • 100 grams of green and white marshmallows 
  • 2 teaspoons of Jomeis Fine Foods Minty Cacao Latte

How To Make it 

  1. Line a square baking dish with baking paper.
  2. Add the chocolate, honey and dairy-free butter to a bowl and melt over low heat in a saucepan.
  3. Allow the mix to cool for five minutes, but don't let it harden. 
  4. Add the marshmallows and crushed arrowroot biscuits to the mix. Stir to combine. Add additional toppings, such as nuts, dairy-free chocolate chips or sugar-free green jelly beans, for extra colour. 
  5. Stir in the Jomeis Fine Foods Minty Cacao Latte mix.
  6. Pour into the pre-prepared tray. 
  7. Refrigerate overnight or until hardened. 
  8. Chop and serve.
